Bison Burger with Roasted Poblano and Muenster

Last night Joe and I went to Ted's Montana Grill for dinner. I had their "New Mexico" burger and loved it so much I wanted to recreate it at home tonight. TMG's version included guacamole (which was amazing) but I was hoping to save some calories so here's what I came up with:

Ingredients:
  • 10 oz ground bison
  • 1 small poblano pepper
  • 3 slices muenster cheese
  • 2 hamburger buns
  • salt & fresh ground pepper
1. Roast the poblano under a broiler for 7-10 minutes on each side until it is blistered and blackened. Let it cool before handling. Run it under cold water to help keep it cool; remove the stem, seeds, and peel the skin/blisters. Slice the pepper into strips.
2. Shape the bison into two patties and season with salt & pepper on both sides. Preheat the grill to high; after placing the patties on the grill for 1 minute, lower the heat to medium and cover. Let them cook for 4 minutes on each side. Add the pepper slices and 1 1/2 slices of muenster, let them cook for another minute, covered. Transfer to a plate and let them sit for 3-5 minutes before serving on toasted hamburger buns.
