Grown-up Egg Salad Sandwich

A quick and easy twist on a classic egg salad. Don't get me wrong, I love egg salad, but it needs a little kick or bite, don't you think?


Ingredients:
  • 8 hard-boiled eggs, shelled & sliced
  • 1/4 cup roasted red pepper, diced
  • 1 scallion, sliced diagonally into small pieces
  • 3 tbsp low-fat mayonnaise
  • 2 tsp spicy brown mustard
  • salt & fresh ground pepper
  • sandwich/hamburger buns or kaiser rolls
In a medium size bowl, combine the eggs, red pepper, and scallion. Use a fork to lightly toss the ingredients together. In a small bowl, combine the mayo and mustard and mix well. Add the mayo/mustard to the eggs and stir together until it's well incorporated. Season with salt and pepper to taste. Serve on a bun or roll.
