A quick and easy twist on a classic egg salad. Don't get me wrong, I love egg salad, but it needs a little kick or bite, don't you think?
Ingredients:
- 8 hard-boiled eggs, shelled & sliced
- 1/4 cup roasted red pepper, diced
- 1 scallion, sliced diagonally into small pieces
- 3 tbsp low-fat mayonnaise
- 2 tsp spicy brown mustard
- salt & fresh ground pepper
- sandwich/hamburger buns or kaiser rolls
