Lemon-Gingertinis

Wow, what a refreshing, sweet treat! Yesterday was over 90 degrees outside and these martinis were an amazing solution to the heat. The sweet ginger syrup mixed with the tart lemon sorbet is absolutely delicious. Enjoy!


Ingredients:
  • 2 lemons
  • 1 piece of fresh ginger (about 2"), peeled and minced
  • 1/4 cup sugar
  • 12 oz frozen lemonade concentrate
  • 4 cups club soda
  • 1 1/2 cup lemon-flavored vodka
  • 1/2 cup lemon sorbet

1. Zest both of the lemons using a small grater or zester. Cut them in half crosswise to cut two thins slices from the center of one of the lemons; quarter the lemon slices into eight pieces. (These will be used for garnish later). Juice the remaining lemons to measure about 1/3 cup of fresh lemon juice.

2. Combine the finely minced ginger root with the lemon zest, juice, and sugar into a small bowl. Microwave on high for 3 minutes until the sugar is well dissolved.

3. Pour the lemonade concentrate into a pitcher. Pour the ginger mixture through a sieve/strainer into the pitcher. Leave the sieve over the pitcher and pour the club soda and vodka into the pitcher, catching any other liquid from the ginger mixture as it strains through the sieve. Remove the sieve and discard the remaining ginger. Stir the pitcher so it is mixed well and refrigerate to keep cool.

4. To serve, scoop a small amount of sorbet into each glass and pour 1-1.5 cups of vodka mixture over the sorbet. Garnish with lemon quarters.
