Triple Chocolate Fudge Brownies


This week I had to throw something together for a bake sale at work. It was very last minute and I didn't have time to go to the store, so I needed something that was easy and ingredients that were already in the pantry. The result was a pan of brownie/cake goodness... they're a little cakey, a little gooey, not too sweet, but extra chocolatey. Oh, and probably enough butter to kill you... sorry!

Ingredients:
  • 3 sticks unsalted butter
  • 6 oz dark chocolate chips
  • 6 oz bitter-sweet chocolate chips
  • 6 eggs
  • 1 3/4 cups fine baking sugar
  • 1 tbsp vanilla extract
  • 1 2/3 cups all-purpose flour
  • 1 tsp salt
  • 1/2 cup dark chocolate chips
  • 1/2 cup semi-sweet or white chocolate chips
  • 2 tbsp powdered sugar
1. Preheat the oven to 350 degrees. Butter and flour a 13x9x2 pan.
2. Melt the butter, 6 oz dark and 6 oz bitter-sweet chips in a sauce pan over medium heat. Stir frequently and immediately remove from heat as soon as it is well combined. Let cool.
3. In a large bowl, mix together the eggs, sugar, and vanilla extract.
4. After the chocolate and butter have cooled, add it to the egg mixture and mix well.
5. Add the flour and salt, mix well so there are no lumps.
6. Add the remaining chocolate chips and mix well.
7. Pour the batter into the pan and bake for 22-27 minutes until a toothpick inserted in the middle comes out clean.
8. Cool for at least an hour and sprinkle with powdered sugar.
