Super Simple Pie Crust

Homemade pie crust with without rolling, cutting, or pie weights. Seriously. Thank you Cook's Illustrated for finally making a recipe that's easy, quick, and delicous!



Ingredients:
  • 1 1/4 cup all-purpose flour
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 8 tbsp unsalted butter, softened
  • 2 oz cream cheese
  • non-stick cooking spray

1. Spray a 9" pie plate with non-stick cooking spray.

2. In a medium bowl, whisk together the flour, sugar, and salt.

3. In a large bowl, beat the butter and cream cheese together with an electric mixer until smooth (1-2 minutes).


4. Add the dry ingredients and mix on low speed until well combined. Reserve 3 tbsp of dough, set aside.

5. Turn out the remaining dough onto a floured surface and gather it into a 6" disk. Transfer to a 9" pie plate.



6. Using the palm of your hand, spread out the dough until it is evenly distributed on the bottom and half way up the sides of the pan.

7. Take the reserved dough and roll it out into a small rope. Break it into smaller pieces and attach to the edges of the dough. Blend the rope into the rest of the dough until smooth.




8. Lightly prick the bottom of the dough with a fork. Refridgerate the dough for at least 30 minutes until chilled.

9. Bake in a 325 degree oven for 35-40 minutes until golden brown.
